Ingredients

  • 1 ½ cups almond flour

  • 1 cup shredded Goot Essa Mountain Valley Sharp Cheddar

  • 2 tablespoons tapioca starch (or cornstarch)

  • ¼ teaspoon baking powder

  • ½ teaspoon garlic powder

  • ½ teaspoon smoked paprika

  • ¼ teaspoon salt

  • 2 tablespoons cold butter, cubed

  • 1 egg, beaten

  • Extra cheese or herbs for topping (optional)

How to make it

Preheat the oven to 375°F and line a baking sheet with parchment paper. In a medium bowl, whisk together almond flour, tapioca starch, baking powder, garlic powder, paprika, and salt. Stir in the shredded cheddar.

Add the cubed butter and work it into the dry ingredients with your hands or a fork until it looks crumbly. Stir in the beaten egg until the dough comes together.

Place the dough between two sheets of parchment paper and roll it out to about ¼ inch thick. Slice into thin strips about ½ inch wide and 4–6 inches long.

Twist each strip gently and lay them on the prepared baking sheet. If you’d like, sprinkle on a little extra cheese or some dried herbs for a finishing touch.

Bake for 15–18 minutes until golden and crisp. Let them cool slightly before enjoying.
