Goot Essa Der Edel Bleu Cheese is a farmstead, Stilton-style blue cheese with a mild cheddar cheese base. This gourmet quality, hand-made cheese came from a recipe developed by a group of Amish dairy farmers in Iowa. We hand inject each wheel with our proprietary mix of blue molds. This cheese is aged for eight months in a cave separate from our other cheeses in order to promote the mold growth. Der Edel Bleu Cheese is a full-flavored blue, ripe with blue mold and with rich cheddar undertones, but with a clean, smooth finish. The texture is creamy smooth, yet with a full mouth feel. The cheese is produced as 5 lb. wheels which are hand rotated weekly. This cheese is designed to be the star on a cheese plate and a charcuterie board. However, it also adds zest and definition to so many foods such as salads, burgers, all types of steaks. It aso makes a great dip and functions well in a cheese log. Of course, it is a main ingredient in home-made blue cheese salad dressing. Der Edel Bleu Cheese pairs well with Dutch Treat Raspberry-Red Beet Spread as well as Nittany Valley Pure Honey and other sweet accompaniments: sun ripened plums, dates, glazed walnuts. This blue cheese is spectacular on crackers, toast and French bread. This cheese fits well with dessert white wines, such as Sauterne and Ice Wine. It compliments a wide range of red wines from the youngest of Pinot Noir to the heartiest Cabernet Sauvignon or Malbec. Der Edel Bleu Cheese adds dimension to the heartier brews such as stout, porter, and strong Belgian ale.
The milk for this cheese is produced on the Esh family farm located in the Nittany Valley of central Pennsylvania. The Eshes are proud of both their farmstead and the care that they give each individual animal. A large emphasis is put on cow comfort and providing a natural environment for the cows.
