Goot Essa Old German Weissa cheese is a raw, cow milk, semi-soft, washed curd cheese with a smooth texture and a buttery, creamy taste. A true all-natural, artisanal cheese, Goot Essa Old German “Weissa” in Pennsylvania Dutch translates to “white” cheese and is the typical household cheese of local Amish families. This farmstead, hand-made cheese is produced from a traditional German-Swiss recipe which gives it a long, silky finish. Old German Weissa is an incredibly versatile cheese that is great on sandwiches yet is also a hit as a snack cheese on crackers and can still serve well on a cheese plate. This cheese is perfect whenever a soft buttery taste is required with a creamy-smooth texture.
Also produced in 40 lb blocks, Old German Weissa is aged for 6-12 months in order to round out the taste profile. This cheese is great in casseroles and adds dimension to lettuce salads. Due to the semi-soft texture, it also makes a great base for cheese logs. This cheese pairs well with various sweets and jellies such as apple butter, honey, and Amish preserves. Berries bring out other taste dimensions of Old German, as do crisp fruits, sweet white wines, Belgium wheat beers and German pilsners.
